We make fresh molasses licorice. We still have the original machinery to make the old fashioned traditional licorice people used to get. This process takes 2 days and is very hands on, from mixing each batch, cooking it, cooling it, extruding it into rows on trays and putting it on racks to dry overnight in an oven. The next day we cut it and hand pack it and even hand seal it using a foot pedal. This whole process, through different steps, takes 4 people as it is heavy work and very time consuming, but makes amazing fresh licorice!
