The Best Autumn Cookie Recipe

With the weather starting to cool, now is the time for us to share a simple Autumn cookie recipe with you. These chocolate chip & mandarin spice cookies take 15 minutes to make and are so simple, that they make a great baking project for the kids. A cookie recipe with brown sugar is always going to be a winner in our books!

Ingredients

75g melted butter
1 egg
½ cup caster sugar
½ cup brown sugar
½ cup chocolate chips
zest of 1 mandarin
¼ teaspoon all spice
1 cup flour
½ teaspoon bicarb soda

Method

Combine the butter, egg & sugars, then add chocolate chips, zest & spice. Stir in the flour and baking soda and stir until combined.  

Spoon mixture onto a tray lined with baking paper. There should be 12-18 cookies depending on their size. Place in the oven for 10-12 minutes at 175°.

If you want the cookies soft and gooey, take them out after 8-10 minutes. Substitute the chocolate chips, spice and zest for any combination from nuts & raisins to marmalade. Anything goes. They are the perfect cookie for a cool Autumn afternoon!
