Autumn Bake

Autumn Cookies

With the waistline well and truly covered by your coat, now is the time to indulge in a cosy Autumn treat. These chocolate chip & mandarin spice cookies take 10 minutes to make and are so simple that they make a great baking project for the kids. You will need:

75g melted butter
1 egg
½ cup caster sugar
½ cup brown sugar
½ cup chocolate chips
zest of 1 mandarin
¼ teaspoon all spice
1 cup flour
½ teaspoon baking soda

Combine the butter, egg & sugars, then add chocolate chips, zest & spice. Stir in the flour and baking soda until the mixture resembles dough.

Hand roll the dough into balls and place on a tray lined with baking paper then flatten. There should be 12-18 cookies depending on their size. Place in the oven for 10-12 minutes at 175°

If you want the cookies soft and gooey, take them out after 8-10 minutes. Substitute the chocolate chips, spice and zest for any combination from nuts & raisins to marmalade. Anything goes. And they will go!
